Charles Edward Mallen built the first Waverly brewery on West Terrace within Adelaide in 1875 and started brewing in December that same year. Primroses Brewery purchased the brewery the next year and Mallen was told he could not start another brewery with 50 miles of Adelaide for the next 10 years, which was later changed to 2 years. Mallen built a new brewery on Bulls Creek road Mitcham, he went partners with his daughter Marie, John Haimes and Arthur Bean. The building was expanded the next year. Arthur Bean retired in 1879 and after the death of John Haimes the Mallens continued to brew until 1909 when Charles Mallen died. Charles’s son Walter Mallen and grandson William Bone continued the brewery until 1934 when the brewery was sold to the Castlereagh brewery.

The Castlereagh Brewery was a group of investors that had purchased the Castlereagh Brewery in Knoxville, one of the investors Harold Hamilton Clark brewed for the company. The brewery only lasted one year, with the company going into liquidation in 1935.

The Adelaide Brewery Ltd was formed after purchasing the Castlereagh brewery in 1936. Brewing continued until 1938 when the Springfield Brewery Ltd bought the brewery. The Springfield Brewery brewed until 1955 when a wild yeast got into the vats and could not be removed. The brewery went into liquidation and was later bulldozed to make way for the Mitcham Shopping Center.
