John Heath (senior), believed to have been a ship's captain, made his way to Wallaroo around 1860. The earliest documented mention of John Heath is in connection with his ginger beer manufacturing activities upon the birth of his twin daughters on February 16, 1867. From 1867 until 1899, John and his brother Henry Heath, a grocer, were listed as partners. William, John's son (born December 31, 1870, Wallaroo; died December 21, 1950, Prospect), joined the partnership in 1899 for a year. Following John Heath's passing on September 1, 1900, his wife Janet assumed control of the business, operating it as Heath & Co. Upon her death on April 15, 1907, her son Charles (born August 26, 1863, Wallaroo; died August 14, 1945, Wallaroo) and daughter Harriet Emma Heath (born December 15, 1875, Wallaroo; died August 15, 1909, Wallaroo) took over. Another son, John Gunn (born November 25, 1861, Wallaroo; died August 27, 1954, Kensington), became involved in the business in 1910. Starting from 1910, the company traded as C. Heath & Co. until its sale to H.E. Simmons in 1925.
