Giles Head Herring (Snr) was born in England in 1820 and came to Adelaide with his father, John Morris Herring, in 1839. They began a successful building business on Waymouth St, Adelaide, by 1845. Around 1840, they started producing ginger beer. By 1848, Thomas Cannon Potts joined the business, which became known as "Herring & Co." After John Morris Herring's death in 1852, Giles took over the ginger beer business and his father became the licensee of the "Union Hotel." In 1870, Giles faced financial difficulties and had to sell his plant and machinery. Despite his efforts, he struggled to maintain the business. His son, Giles Head Herring (Jnr), attempted to revive the operation but was declared insolvent by April 1871. The business changed hands several times afterward, with Frances C. Curtin briefly taking over in 1872, and another attempt by G.H. Herring to restart the business in 1873.
