Herring & Co

It seems that John Morris Herring, his son Giles Head Herring, and Thomas Cannon Potts, who later became Giles Head Herring's father-in-law, were all involved in Herring & Co. Records from 1847 indicate that J.M. Herring was listed as the occupier of the ginger beer brewery on town acre 175, Waymouth Street, Adelaide. Subsequent listings in 1848-1849 show J.M. Herring & Potts as occupiers, and by 1850, G.H. Herring is listed as the occupier.

Giles Head Herring married Potts' daughter, Georgina, on August 30th, 1849, and their son, also named Giles Head Herring (Junior), was born the following year.

The company enjoyed a strong reputation for blending wine and spirits, trading across South Australia and Broken Hill, NSW. They also served as agents for leading British and foreign wines. In 1926, the company ceased operations.
