William Samuel Bailey began manufacturing aerated waters in 1866 at Morphett Street and Franklin Street, Adelaide, continuing until 1886. In 1887, he established a new factory at Gilbert and Avoca Streets, later relocating to Gilbert Street by 1905. He leased his business in 1918 to C.T. Knight and W.G. Coote, who dissolved their partnership a year later. Knight continued the business, obtaining an extension in 1928. After Bailey's death in 1925, Knight subleased to Big Orange Mills Ltd. Knight, a cordial maker, remained active in the industry until at least 1935, later being associated with F.A. Henriques Ltd.
